Özlem Tokuşoğlu (Associate Professor Dr.) was born in Izmir, Turkey, completed her bachelor’s (1992) and master’s (1996) at Ege University in the Department of Chemistry and also completed her PhD from Ege University in the Department of Food Engineering (2001), Izmir, Turkey. She worked as a researcher at Ege University from 1993 to 2001. She professionally officiated at the Food Science and Nutrition Department at the University of Florida-Gainesville, Florida, USA as a research associate during 1999–2000. Dr.Tokuşoğlu has worked on the faculty staff as an assistant professor at Celal Bayar University, Manisa during 2002–2007, Turkey. Tokuşoğlu, is currently also working as associate professor, faculty member in the Department of Food Engineering of Celal Bayar University from 2007 to now. She’ll be full professor at December Tokuşoğlu was a visiting professor at the Food Science and Nutrition Department at the University of Florida, Gainesville, Florida, USA during 1999–2000 and at the School of Food Science, Washington State University, Pullman, in the State of Washington, USA during April–May 2010. Her study focusses on food quality control, food chemistry, food safety and toxicology, shelf-life of foods and innovative food processing technologies on foods, beverages, and functional products. Her specific study areas are phenolics, phytochemicals, bioactive antioxidative components, food additives, bioactive lipids, their determinations by instrumental techniques, their effects on quality of food and beverages, oil-fats and functional food technologies and the novel food processing effects on food bioactives, food toxicants, and shelf-life of foods and beverages. Tokuşoğlu has several editorial and reviewer assignments in Science Citation Index (SCI) and international index covered journals. Tokuşoğlu has published a scientific edited book titled Fruit and Cereal Bioactives: Chemistry, Sources and Applications by CRC Press, Taylor & Francis, USA and the book titled Food By-Product Based Functional Food Powders by CRC Press, Taylor & Francis, USA is also in progress. She has many research papers published in peer-reviewed international journals covered by the SCI and by the international index covered journals, international book chapters, international presentations (as oral and posters) presented at international congresses and other organizations. She was the principal administrator and advisor for the theses of four masters’ students; also one doctorate student and one masters’ students are in progress from 2014.

Gary Stoner is Professor of Medicine at the Medical College of Wisconsin (MCW) Division of Hematology and Oncology, specializing in the fields of chemical carcinogenesis and cancer chemoprevention. He serves as Director of the Molecular Carcinogenesis and Chemoprevention Program in the newly developing Cancer Center. Dr. Stoner received his PhD in microbiology from the University of Michigan in 1970 and became involved in cancer research as a post-doctoral fellow and research scientist at the University of California-San Diego (UCSD). While at UCSD, his research was focused on the development of a mouse model of lung cancer for the identification of environmental carcinogens and for mechanistic studies of lung carcinogenesis. He then joined the Laboratory of Human Carcinogenesis at the National Cancer Institute where he conducted research on the metabolism of tobacco carcinogens in human lung tissues and developed human lung cell culture systems for investigations of carcinogen/oncogene-induced cell transformation. He became involved in chemoprevention research in the early 1980’s while at the Medical College of Ohio, initially investigating the chemopreventive potential of naturally-occurring ellagitannins and isothiocyanates in the rodent lung and esophagus. As an extension of research with ellagic acid, Dr. Stoner’s laboratory developed a “food-based” approach to the prevention of esophagus and colon cancers in rodents and in humans using freeze-dried black raspberries. His research is documented in more than 350 peer-reviewed publications and book chapters, and he has edited several books. Dr. Stoner joined MCW after nearly 20 years at the Ohio State University College of Medicine where he held the positions of Lucius Wing Endowed Chair in Cancer Research and Therapy, Associate Director for Basic Research and Director of the Chemoprevention Program in the Cancer Center, and Chair of the Division of Environmental Health Sciences and Associate Dean for Research in the College of Public Health. In addition, he served as Director of the Laboratory of Cancer Etiology and Chemoprevention in the Arthur James Cancer Hospital and Richard Solove Research Institute. Dr. Stoner has served on several grant and contract review committees including the NIH Chemical Pathology Study Section, the NCI Cancer Biology and Immunology Contract Review Committee, and as Chair of the NIH Chemo/Dietary Prevention Study Section and the American Cancer Society Advisory Committee on Carcinogenesis, Environment and Nutrition. He has also served as President of the Carcinogenesis and Molecular Biology Specialty Sections of the American Society of Toxicology and of the Ohio Valley Society of Toxicology. He has received numerous awards including the NIH MERIT award, and the Distinguished Alumni Award and Honorary Doctorate from Montana State University. He is also a Fellow in the American Association for the Advancement of Science.

Hilal Elver is a Research Professor and co-director of the Project on Global Climate Change, Human Security, and Democracy housed at the Orfalea Center at the UCSB. She is currently serving as the UN Special Rapporteur on the Right to Food with the Office of the High Commissioner on Human Rights. She has a law degree and a Ph.D. from the University of Ankara Faculty of Law, and SJD (Doctoral degree of juridical Science) degree from UCLA School of Law. She started her teaching career in 1985 at the University of Ankara Faculty of Law, and during this period she was also appointed by the Turkish government as the founding legal advisor of the Ministry of Environment, and the General Director of Women’s Status in the Office of the Prime Minister. In 1994, she was appointed by the United Nations Environment Program to the UNEP Chair in Environmental Diplomacy at the Mediterranean Academy of Diplomatic Studies in Malta. In 1993 she was a Fulbright Scholar at the University of Michigan Law School in Arbor, and 1996-1998 she was a visiting fellow at the Center of International Studies at Princeton University. Since 1998 she has been teaching comparative law, international human rights law, and international environmental law at various universities in the U.S and Europe. Currently, she is one of the members of the Turkish negotiation team at the UN Framework Convention on Climate Change.

Lara Hanna Wakim is the Dean of the Faculty of Agricultural and Food Sciences at the Holy Spirit University of Kaslik, Lebanon. She is the Vice-President of the Global Confederation of Higher Education Associations for Agricultural and Life Sciences-2015 and Member of its Steering Committee. She served as Head of Food Science Department at USEK and as Responsible of the International Relations. She has an extensive experience as Food Safety consultant. She is Member of the National Committee of Agri-Food Industries at the Lebanese Ministry of Agriculture, an Active Member at the Lebanese Standards Institution at the Lebanese Ministry of Industry, Member of the Lebanese Association of Food Scientists and Technologists and also Member of the Governing Council of the International Union of Food Science and Technology Her research interests are primarily focused on consumer perceptions and attitude toward food safety in Lebanon. She holds an Agricultural Engineering Diploma from USEK (Lebanon), an MS in Food Science from the Agence Universitaire de la Francophonie (AUF)/INAP-G (France) and a PhD in Food Process Engineering from AgroParis Tech (France). She holds as well an MA/PG Diploma in Learning and Teaching in Higher Education from University of Chester (UK)

Following graduation from Harvard College and the Johns Hopkins University School of Medicine, Edward L. Trimble trained in obstetrics and gynecology at the Vanderbilt University Medical Center. After earning a master’s degree in public health from the Johns Hopkins School of Hygiene and Public Health, he completed a fellowship in gynecologic oncology at Memorial Sloan-Kettering Cancer Center. He is board-certified in obstetrics and gynecology, as well as in gynecologic oncology, by the American Board of Obstetrics and Gynecology. In 1991, he joined the National Cancer Institute, where he is now Head - Gynecologic Cancer Therapeutics and Quality of Cancer Care Therapeutics, Clinical Investigation Branch, Cancer Therapy Evaluation Program, Division of Cancer Treatment and Diagnosis. His duties involve liaison with the Gynecologic Oncology Group and the American College of Surgeons Oncology Group, as well as oversight of issues involving the elderly, minorities, women’s health, international collaboration, cost, cancer health disparities, health-related quality of life and patient-reported outcomes in NCI-sponsored treatment trials. He practices gynecologic oncology at the NIH Clinical Center and Johns Hopkins Hospital, where he is an Associate Professor of Gynecology & Obstetrics and Oncology. Dr. Trimble has co-authored 46 peer-reviewed articles and 18 book chapters. For his work at NCI he has received two Public Health Service Commendation Medals, 4 NIH Merit Awards, and the NCI Director’s Gold Star Award. He is frequently asked to speak on topics related to gynecologic oncology and cancer treatment trials at national and international meetings.

Banz's specialization is in Nutrition Physiology, focusing primarily on the relationship amongst the bioactive components of functional foods, health and gene-nutrient interaction. Much of his research is concentrated on the health of soybeans, soybean phytochemicals and synthetic estrogens ranging across a wide spectrum of topics, from basic mechanistic research to applied human studies. Dr. Banz teaches undergraduate and graduate courses in Nutrition and Dietetics.

Treatment and prevention of obesity and its associated syndromes (metabolic syndrome, Type 2 diabetes mellitus, nonalcoholic fatty liver, and heart disease). Demonstrated unique anti-diabetic effects of numerous plant extracts (e.g., soybean, milk, flaxseed and ginseng extracts) and synthetic compounds. In preclinical rat models, some of the compounds tested have exhibited efficacy in controlling specific diabetic parameters and cardiovascular disease risk factors. Performing further laboratory and preclinical tests to help determine the efficacy of the most promising plant extracts and synthetic compounds identified.

Dr. Qi’s research has focused on the genetic, nutrition, biochemical risk factors and gene-environment interactions in relation to obesity, type 2 diabetes and the cardiovascular complications in diabetic patients. Dr. Qi is the Principal Investigator of two NIH R01 grants. the Principal Investigator of a American Heart Association Scientist Development Grant, and Co-Principal Investigator of European Foundation for the Study of Diabetes (EFSD) funded lifestyle intervention trial in Chinese women. As Principal Investigator, he is also leading a metabolomic study in two diet intervention trials funded by U.S. – Israel Binational Science Foundation.

Osama Ibrahim is a highly-experienced Principal Research Scientist with particular expertise in the field of microbiology, molecular biology, food safety, and bioprocessing for both pharmaceutical and food ingredients. He is knowledgeable in microbial screening /culture improvement; molecular biology and fermentation research for antibiotics, enzymes, therapeutic proteins, organic acids and food flavors; Biochemistry for metabolic pathways and enzymes kinetics, enzymes immobilization, bioconversion, and Analytical Biochemistry. Dr. Ibrahim was external research liaison for Kraft Foods with Universities for research projects related to molecular biology and microbial screening and holds three bioprocessing patents. In January 2005, he accepted an early retirement offer from Kraft Foods and in the same year he formed his own biotechnology company providing technical and marketing consultation for new startup biotechnology and food companies.

Charles Brennan is a Professor of Food Science at Lincoln University, New Zealand where he is a member of the Faculty of Agriculture and Life Sciences. Brennan's research interests lie in the interface between food science and human nutrition with particular interest in how bio-active ingredients and processing manipulate the nutritional quality of foods in particular the role of plant dietary fibre in manipulating the glycaemic response. Brennan is a graduate of London University, Wye College (BSc in Applied Plant Science) and King's College London (PhD in Food Science and Nutrition). Krishnamurti Dakshinamurti, Emeritus Professor of Biochemistry and Molecular Biology, University of Manitoba, Winnipeg, Canada , received his PhD in 1957. After working as a Senior Research Associate at the University of Illinois, Urbana, IL, and at the Massachusetts Institute of Technology, Cambridge, MA, he was appointed Associate Director of the Research Institute, Lancaster, PA. He was invited to the University of Manitoba, Faculty of Medicine as Associate Professor of Biochemistry and Molecular Biology in 1964, becoming Full Professor in 1973. He spent 1974 – 75 as Visiting Professor of Cell Biology at the Rockefeller University, New York. He received the Borden Award of the Canadian Societies of Biological Sciences in 1973 and was elected Fellow of the Royal Society of Chemistry, U.K., and Fellow of the American College of Nutrition, Fellow and President of the International College of Nutrition. He is the author of over 200 peer reviewed publications and six books in the areas of metabolic biochemistry, nutrition and neuroscience. The monograph on “Vitamin Receptors” which he edited in 1994 was reprinted by Cambridge University Press in 2010 in their “classics series”. Dr. Dakshinamurti has been on the Editorial Board of many international journals in the area of Neuroscience, Biochemistry and Nutrition. His pioneering work in the area of epigenetic effects of vitamins is highly regarded. Dr. Dakshinamurti was elected a Fellow of the Royal Society of Medicine, London. He has been invited to lecture at over 100 universities and research centers around the world. Dr. Dakshinamurti was elected to Emeritus Professorship of the University of Manitoba in 1998. He was Co-Director of the Centre for Health Policy Studies at the St. Boniface Hospital Research Centre. Graham is a Professor of Applied Biology in the Department of Biological Sciences. Sevil Yücel received a B.S. in 1987, and M.S. from İstanbul Technical University, both in chemical engineering. She received her Ph.D. in Chemical Engineering from Istanbul Technical University in 1999. She was a postdoc fellow at the Department of Food Science, University of Arkansas in USA. From 1991 to 2006 she studied at Istanbul Technical University. Dr. Yücel moved in 2006 to the Department of Bioengineering at the Yildiz Technical University where he currently holds the position of Professor. She is advisory board member of Turkish Lipid Group. Mirjana Menkovska is full Professor at the Department of Food Technology and Biotechnology at the Institute of Animal Science, Sts.Cyril and Methodius University in Skopje, Macedonia. Her background is Food Technology. She graduated at the Faculty of Technology and Metallurgy in Skopje in 1976, took M.S. Degree in Instrumental Analysis at the same University in 1982, and Ph.D. degree in Food Technology at the University of Belgrade, Serbia. She was research visiting scientist at GMRC in Manhattan, Kansas, USA, during the academic 1985/86, at Cereal Research Institute in Detmold, Germany in 1997, and at many other known research centers in Europe. Omer Kucuk is a medical oncologist with a major interest in nutrition and cancer prevention. He conducted the first clinical trials to show the benefits of soy and lycopene supplements in prostate cancer treatment. Omer Kucuk, MD, comes to Winship Cancer Institute from the Karmanos Cancer Center at Wayne State University in Detroit where he was a professor and co-leader of the population sciences and prevention program and member of the genitourinary and head and neck cancer multidisciplinary groups. Before joining the medical staff at Wayne State University, Dr. Kucuk served as professor and researcher at the University of Hawaii's John A. Burns School of Medicine in Honolulu.Kucuk has more than 150 peer-reviewed publications, review articles and book chapters to his credit, and he is on the editorial boards of several scientific journals, including Cancer Epidemiology, Biomarkers and Prevention. He has mentored numerous students, residents and fellows.

Nutrition and cancer therapy are Dr. Kucuk's primary research focus. He has published extensively on various nutrients and botanicals alone and in combination with chemotherapy and radiation. Dr. Kucuk has been conducting preclinical and clinical studies with soy isoflavones, lycopene and other nutritional and botanical compounds since 1996. He is investigating the effects of micronutrients and phytochemicals on biomarkers of cell growth, differentiation, metastasis, inflammation, oxidative stress, DNA methylation and gene expression in a variety of cancers. His research also includes clinical studies on the epigenetic effects of botanicals, physical activity and relaxation techniques such as meditation and yoga.

Dr. Wan Rosli Bin Wan Ishak is the Deputy Dean at the School of Health Sciences, Universiti Sains Malaysia Health Campus. He holds a PhD in Food Science and Nutrition. He has supervised a number of Postgraduate students. Dr. Wan has received more than 40 awards for Innovation and Presentations. His work is published in 85 Journals including the International Food Research Journal, European Journal of Nutrition, International Journal of Food Sciences and Nutrition etc. His work has also been published in 5 books.

Dr. Ardeleanu Serban is an Assistant Professor in Internal Medicine and Nephrology at the Grigore T. Popa University of Medicine and Pharmacy. Since 3 years he works as a Nephrologist at the AURAR St Louis Centre of Dialysis. He has obtained his PhD in Nephrology. He is a member of the Romanian National Society of Nephrology (SRN) and also the Founding member of the Romanian Society of Bioethics. His research work is published in 39 journals and 9 books. He is currently conducting a study for nutritional parameters and benefits of oral supplements in dialysis patients.

Dr. Osama Ibrahim is a highly-experienced principal Research Scientist with particular expertise in the field of microbiology, molecular biology, food safety, and bioprocessing for both pharmaceutical and food ingredients. He is knowledgeable in microbial screening /culture improvement; molecular biology and fermentation research for antibiotics, enzymes, therapeutic proteins, organic acids and food flavors; Biochemistry for metabolic pathways and enzymes kinetics, enzymes immobilization, bioconversion, and Analytical Biochemistry and Immunology , Dr. Ibrahim was external research liaison for Kraft Foods with Universities for research projects related to molecular biology and microbial screening and holds three bioprocessing patents. In January 2005, he accepted an early retirement offer from Kraft Foods and in the same year he formed his own biotechnology company providing technical and marketing consultation for new startup biotechnology and food companies. Dr. Ibrahim received his B.S. in Biochemistry with honor and two M.S. degrees in Microbial physiology/ Fermentation and in Applied Microbiology. He received his Ph.D. in Basic Medical Science (Microbiology, Immunology and Molecular biology) from New York Medical College. He is a member of American Chemical Society, American Society of Microbiology, and Society of Industrial Microbiology since 1979.

Dr. Santosh Jain Passi is an independent Public Health Nutrition Consultant. She obtained her Ph.D. in Food and Nutrition from the University of Delhi. She has nearly 43 years of teaching experience and has guided/guiding a number of Ph.D. researchers in the field of nutrition. She is Former Director, Institute of Home Economics, University of Delhi; Associate & Honorary Consultant, Nutrition Foundation of India; Honorary Professor of Public Health Nutrition at Amity University, Noida; and Head – PHN Division, LSTech Ventures Pvt. Ltd., Gurugram. She was the former director of The Institute of Home Economics University in Delhi. She has been the Principal Investigator of various research projects funded by National /International Organizations like UGC, FAO, UNICEF, ICMR, ICAR, DRDO etc. as well as short term consultant for the Food and Agriculture Organization (FAO), World Bank, International Life Sciences Institute (ILSI)-India etc. She has published a number of research papers & reviews, books and Chapters, articles in various National/International journals and periodicals. Dr Passi is a Life member/ Executive Member/ member of many Professional Bodies in Nutrition, Dietetic and allied areas.

Dr. Setareh Torabian-Riasati is the Dietetic Program (DPD) Director and Associate Professor in Nutrition and Dietetics at California State University, Northridge (CSUN). She is a nationally certified Registered Dietitian (RD) and holds a Doctorate degree in Public Health, Nutrition from Loma Linda University Medical Center. She was the recipient of the two time Polished Apple Award for excellence and teaching and mentorship. Dr.Torabian-Riasati has written for numerous journals, such as European Journal of Clinical Nutrition, British Journal of Clinical Nutrition, Human Journal of Nutrition, Journal of American Dietetic Association and many more. She has published a book chapter on Polyphenols. She is an active member of various Nutrition and Dietetic related societies including Academy of Nutrition and Dietetics, Accreditation Council of Education in Nutrition and Dietetics, and American Society of Nutrition. She also serves in editorial board of many scientific journals.

Dr. Shaodong Guo is Associate Professor in the Department of Nutrition and Food Science at Texas A&M University College. He received his Ph.D in Physiology from Peking University, China. Then he completed his postdoctoral research training in Genetics, Biochemistry, and Medicine in the Chinese Academy of Sciences, the University of Illinois at Chicago, and Harvard University, respectively. Dr. Guo was an Instructor in Medicine at Children's Hospital Boston and Harvard Medical School for two years prior to joining the faculty at Texas A&M Health Science Center. Currently, Dr. Guo serves as senior editor for the Journal of Endocrinology and Journal of Molecular Endocrinology, two major official journals of Endocrine Society of Europe, UK, and Australia, and he is the textbook chapter writer for Metabolic Syndrome edited by Rexford Ahima and published by Springer in 2016. Dr. Guo’s research has been funded by American Diabetes Association (ADA), American Heart Association, and the National Institute of Health. He is a recipient of ADA junior faculty award, career development award, and Richard R. Lee Award. His work has been published in a number of journals including the JBC, Endocrinology, Hypertension, Diabetes, Circulation Research, AJP, MCB, and Nature Medicine, receiving about 5,000 citations with an h-factor of 34 based on Google Scholar Citation.

Dr. Shaodong Guo's research interests include the mechanisms of insulin resistance, obesity, and diabetes, aiming at a nutritional or therapeutic intervention for the treatment of metabolic and cardiovascular diseases. Dr. Guo has been working on the gene transcriptional regulation of metabolic homeostasis by insulin receptor substrate proteins (IRS) and Forkhead FoxO transcription factors with the hope of understanding how the signaling from insulin via IRS to FoxO proteins plays a key role in many fundamental cellular processes, including cellular growth and metabolism. His lab has taken a multidisciplinary approach in both cell- and animal- based experiments to investigate how different signals regulate FoxO and how dysregulation of the FoxO pathway is involved in the development of chronic diseases.

Dr. Mohammad Sharif Sharifi, the CEO of Australian Food and Pharmaceutical Industries has extensive management experience in establishing companies and commercialising products. Dr Sharifi's qualifications include a Master's Degree in Chemistry, Food and Drug Analysis, (UNSW 1999) and a PhD in Medicinal Chemistry and Medical Microbiology (University of Western Sydney 2006). Sharif was also a lecturer/Medical Facilitator at UNSW, University Sydney and UWS 2003-2015.
